From The Garden

Half an acre of terraces behind the deck — tomatoes, capers, wild fennel, herbs and four old fig trees. Nine plates that change when the garden changes, which is more often than the card.

Tomato season

Garden tomato salad, Tinos cheese€19

Late June to mid-September and genuinely not available outside it. Wild fennel, sea-salt focaccia underneath to take the juice. We will tell you no in May.

Tomatokeftedes, our way€14

The overripe end of the crop, mint from the top terrace, fried hard. Yannis makes them at the point in August when there is more tomato than deck.

Roast tomatoes with capers€13

Slow-roasted flat, salted capers off the wall, oil, oregano. It sits under a whole fish better than any potato ever has.

Greens and pulses

Fava from Schinoussa€12

Not from our garden and we do not pretend otherwise — Schinoussa does it better than anyone.

Wild greens, boiled and dressed€12

Whatever the terraces gave that week: vlita in high summer, stamnagathi in the shoulder months. Lemon and oil, warm rather than hot.

Grilled artichokes, lemon-leaf oil€14

March to June. The season is short and we do not extend it with anyone else’s artichokes.

The rest of the terrace

Fennel and orange salad€13

Shaved raw fennel, sour orange, black olive, a great deal of oil. The plate we put next to anything salt-baked.

Courgette flowers, rice and herbs€16

Filled with the same rice that goes into the calamari, steamed rather than fried. Four weeks in early summer.

Terraced figs, warm, with cheese€15

August and September, from the four old trees on the middle terrace. Halved, warmed on the fire, and a lot of pepper.

What grows where

The top terrace is herbs and mint, the middle is figs and the tomato rows, the lower one is artichokes and whatever green is in season. The caper wall is not a terrace at all — it is the drystone boundary the deck is built against, and it has been producing since before any of us.

Why the card moves

A garden this size cannot supply a restaurant year-round, and we have never asked it to. It supplies what it supplies, and the card is rewritten every Tuesday around that. The tomato salad genuinely disappears; so do the artichokes, in the other direction.

What we do not do is buy the same thing in from a wholesaler and keep the name on the menu.
